Level indicator
This is not a year, but the number of hectoliters. The current storage room used to be a glass barrel with a tiled floor.
These barrels contain Pinot Blanc, Chardonnay, Pinot Noir, Merlot, Lagrein and Cabernet Sauvignon.
Tanks
Individual vineyards are vinified in these tanks. We later use the barrels to store wines that are ready to be bottled.
These barrels contain Crus of the varieties Pinot Blanc, Chardonnay and Pinot Grigio as well as Vernatsch, Pinot Noir and Lagrein.
Piston pump
This is used to cover the wine or pump it upwards for bottling.
Temperature probe
Each tank has its own temperature probe to optimally monitor the ripening conditions. There is a sampling tap to carry out random sampling.
Each barrel is individually labeled with the variety, vintage and location.

Barrique cellar
In this area of the cellar, the Riserva wines are stored in small wooden barrels (225l & 500l). White wines ferment directly in the wooden barrels, while the red wines are only placed in the barrels for maturation after the biological malolactic fermentation.
Cisterns
These rooms were lined with tiles and were used to store table wine when the yield per hectare was higher. Each room held about 200,000 litres.
Wooden barrel cellar
In the past, Vernat pigs were traditionally stored in this wooden barrel cellar. For quality reasons, we are now gradually replacing many of these barrels with steel tanks.
In contrast to the red steel tanks, the temperature of these 1,800l to 9,000l tanks can be regulated with cooling water.
SANCTISSIMUS
Essence of Pinot Blanc: The vines planted in 1899 on an extremely steep slope characterize one of the oldest vineyards in South Tyrol. The grapes are mashed in amphorae, fermented and then matured in barrels made of Eppan oak.
Steel tanks
These steel tanks with a capacity of 2,300l and 9,800 are enamelled on the inside and are ideal as storage tanks.

Barrique barrel with capacity 225l
Here, wines from the selection line are stored in specially made barrels from the Mittelberger cooperage.
Gravity cellar
The winery was built in 1907 with 4 floors and a total height of 22m. The natural gradient is gentle on the wine and avoids unnecessary energy consumption.
Clay amphoras
Our Pinot Blanc SANCTISSIMUS ferments in these amphorae with a capacity of approx. 300 l, which are characterized by their porous structure.
The red color marks red wine.
Barriques & Tonneaux
These barriques and tonneaux barrels made of French oak will be manufactured especially for us in collaboration with the Mittelberger cooperage in Frangart.
Wooden barrels
You can see large wooden barrels (5,500l) for the fermentation and storage of individual plots and crus.
